VEgan banana cinnamon muffins

Serves: 12

Prep time: 20 minutes

Cook time : 15-20 minutes


2-3 ripe bananas

1 3/4 cup of flour

1 TBS Baking powder

2 teaspoons of cinnamon

a pinch of salt

1 1/4 cups sugar

1/4 cup brown sugar

1/2 cup melted vegan butter

1/2 cup slightly warmed dairy free milk

1 TBS vanilla


Start by preheating oven to 400 degrees. In a small bowl, mash bananas, and set aside. In a large bowl combine flour, baking powder, cinnamon and salt. In a medium bowl combine sugar, butter, milk, brown sugar and vanilla and whisk together, then fold in bananas, pour wet mix over dry, and mix well. Grease or butter muffin tin, then fill 2/3rd of the way with batter. Bake for 15-20 minutes, or until golden, let cool for about 10 minutes.

(Optional: Put vegan butter on top of muffins and roll them in cinnamon sugar mixture.)
