vegan lemon poppy muffins

Makes: 12 muffins

Prep time: 10 minutes

Cook time: 20 minutes


2 cups flour

2/3 cups of sugar

2 tbsp Poppy seeds

1 tbsp baking soda

1/2 tsp baking powder

1/2 tsp salt

1 cup of apple sauce

1/3 cup vegetable oil

3/4 cup of nondairy milk

1/4 cup lemon juice

2 tbsp lemon extract

1 tbsp lemon zest


1/2 cup powdered sugar

1 tbsp lemon juice

Preheat oven to 375. Then start by adding all your dry ingredients in a large bowl, stir the dry ingredients together then incorporate the wet ingredients, and thoroughly combine. Butter your muffin tin, or put the muffin liners in, then equally disperse the batter, bake for 20 minutes. While the muffins are baking, begin making your icing, add the confectioners sugar to a bowl, then mix in the lemon juice, if you want a thicker consistency you can add in more confectioners sugar.

Let muffins cool, then drizzle the icing over the muffins.
