Vegan potato salad

1.5 lbs yellow potatoes

1 cup plant based mayo

2 tbsp white vinegar

2 tbsp yellow mustard

3/4 cup chopped celery

1 chopped white onion

1 tbsp of relish (or 1 dill pickle)

salt and pepper to taste

Begin by boiling your potatoes, for about 25-30 minutes. (To avoid them becoming too soft keep checking with a fork every few minutes until you have reached your desired consistency). While those are boiling, start sautéing your onions until golden brown, then add in your celery and cook for 3-5 minutes. In a large bowl add your plant based mayo, vinegar, relish and mustard, and your mixture of celery and onions, top with salt and pepper. Once the potatoes are finished chop them into cubes, and incorporate them into the dressing mixture. Mix it all together till it is mixed to perfection, and enjoy!
