VEgan beef tacos

Makes: 8 Tacos

Prep Time: 15 minutes


1 onion

1 lb Veggie ground beef crumbles

1 packet of taco seasoning

1 can of vegetarian refried beans

1 1/2 cups of mixed greens

2 medium tomatoes

Guac (to taste)

Salsa (to taste)

Vegan cheese (to taste)

8 Soft tortillas

8 hard tortillas

Start by sautéing onions in a pan, once its golden brown add the veggie crumbles. Let them cook on medium heat for about 10 minutes or until cooked fully, continue stirring throughout. After that, add the taco seasoning to the crumbles, and mix thoroughly. Once this is finished you can start assembling! We started with our hard taco shells and filled them with the crumble mixture, topped it with the lettuce and tomato, and then added the guac salsa and cheese and some hot sauce on top. We then wrapped the soft taco around the hard. On the side, we served it with the refried beans! Delicious!!
